First, you need to know that gluten is a protein found in wheat, rye, barley and all foods that are made with these grains. People with celiac disease (a digestive disorder) may not eat food containing gluten, their body reacts by damaging the small intestine. However, only one percent of the total population actually have celiac disease. The only way to manage celiac disease is to follow a gluten free diet. With that said, there are many people who have a gluten intolerance. When these people eat foods that contain gluten, they also experience uncomfortable symptoms. However, they do not test positive for celiac disease and do not have actual damage to their small intestines.
